Russian Hot Girl Delivers Secret Uzbek Recipe
It rolled out just like a Clancy novel. This Russian hot girl arrived to my apartment in Moscow late one night with her secret family recipe. You see, her father was originally from Uzbekistan and this recipe had been passed down through the generations. We grabbed a bottle of kvas and headed down to the park to light the coals in preparation on the open mangal.
Uzbek Lamb Shashlik Marinade Ingredients
In Uzbekistan a nice piece of lamb is used for Shashlik. Chunks of kurdyuk, or fat from the local sheep is added to the skewers as well many times. Pork or beef can be substituted according to your preference though. I try to select a piece with a fat cap on it. This only increases the flavor.
- 1/4 cup white vinegar
- 1 Tbs canola oil
- 1 large sweet onion
- 2 crumbled bay leaves
- 1 tsp cumin seeds
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp black peppercorn
- Ground black pepper to taste
- Ground sea salt to taste
Place cubed meat into a container or plastic bag with marinade and let sit in the fridge overnight for best results.
Serve with flat bread, pickled vegetables, or thinly sliced onions. Russian salads make great side dishes as well.
